Peas and Tomato Pasta

Ingredients

  • 350 g Penne or other pasta of your choice
  • 2 tbsp olive oil
  • 1 tbsp garlic, minced
  • 1 can (540ml) diced tomatoes with Italian spices
  • 1 1/2 cups frozen green peas, thawed
  • 2 tbsp fresh basil

Instructions

  1. Cook pasta al dente in a saucepan of boiling, salted water. Drain.
  2. Heat the oil over medium heat in a large skillet. Cook garlic for 1 to 2 minutes.
  3. Add tomatoes and green peas. Bring to a boil. Salt and pepper to taste.
  4. Add pasta. Stir and cook 1 minute.
  5. When serving, sprinkle with basil.
